Chocolate Mint Fudge

#2 of my fudge recipe testing and I had high hopes for this one, as I remember making it about a year ago, and it being exactly how I wanted, I however lost the recipe afterwards.

This fudge has 2 layers, one of chocolate fudge, one of mint fudge and is simply delicious.

You’ll need:

2 Saucepans
1 loose bottom 8/9 inch squared tin, lined with greaseproof paper

as well as:

335 g Dark Chocolate
1 (14 ounce) can Sweetened Condensed Milk
170 g White Chocolate
15 ml peppermint extract
Green food colouring

In a large saucepan, melt the dark chocolate along with 2/3 of the can of condensed milk,
In another saucepan, melt the white chocolate along with the remaining 1/2 of the can of condensed milk
Stir both occasionally until fully melted

Add the peppermint extract and green food colouring to the white chocolate mixture

Pour the dark chocolate mixture into the bottom of the tin and spread until even, and then chill for about 10/15 mins until set slightly
Then pour the peppermint mixture over the top and spread until even.
Chill for a further hour or until fully set.

Turn out onto a board, and cut into small squares.

These work perfectly as presents, and will last a good 2 weeks in the fridge, sealed.
